Please Stop Telling People To Water Bath "Everything"

Yep. I totally get it's how you were raised and in 15 generations no one in your family got sick doing it. That does not mean botulism is a false worry. It kills people. And it'd kill many, many more in a SHTF with no medical care. The spores do not die in 212 degree boiling water baths unless its a high acid/sugar environment. The PC will reach 240 degrees and kill them.

Pressure canners are like $60, or $80 for the big presto. Stop doing things of old and get with the program. Canning foods correctly is just as easy as canning foods in a way as to kill your family.

The USDA and Ball canning have tested and tested foods for decades and they make common sense recommendations to keep people alive. Just accept this fact & can correctly. But even if you decide not to, stop telling new canners to follow your method without at least telling them about Ball/USDA guidelines. Just bc YOU assume a risk doesn't mean you should act like its normal or recommended.
